<p>Are you always on the hunt for a great breakfast option that is easy and your kiddos will love? Me, too! I recently found discovered baked oatmeal, and it checks all of the boxes. I used to make lemon blueberry breakfast cake as a special treat, for things like the first day back to school. But, even with my adaptations, I couldn&#8217;t make it as healthy and filling as I wanted. So, while I&#8217;ll still make the breakfast cake every so often, this Lemon Blueberry Baked Oatmeal is my new back-to-school favorite. Packed with protein, complex carbohydrates, and healthy fats, it&#8217;s designed to keep your kiddos full and energized all morning long.</p>
