<p class="wp-block-paragraph">I was scrolling Instagram last week — you know, &#8220;just checking one notification&#8221; scrolling that turns into twenty minutes — when I stopped on a video from @simplehomeedit making butter chicken meatballs. I don&#8217;t even think I finished watching before I was already planning my grocery list. Something about that rich, spiced sauce pooling around perfectly browned meatballs just does something to me.</p>



<p class="wp-block-paragraph">But if you&#8217;ve been here a while, you know I can&#8217;t leave a recipe alone. My brain immediately went to how I could make it work for my body — and for yours. So here&#8217;s my gluten-free, dairy-free spin on butter chicken meatballs, built with the same cortisol and blood sugar support you&#8217;ll find in everything else on this blog.</p>

<p class="wp-block-paragraph"><strong>Why this recipe works for your hormones</strong></p>



<p class="wp-block-paragraph">This isn&#8217;t just comfort food dressed up to sound healthy. Every ingredient here is doing something for you.</p>



<p class="wp-block-paragraph"><strong>Ground chicken breast</strong>&nbsp;is the protein base here, keeping this recipe lean without sacrificing how satisfying it feels. Because the sauce brings plenty of fat on its own — from the ghee and coconut milk — you still get that steadying combination of protein and fat working together to keep your blood sugar level, without stacking extra fat directly into the meatballs themselves.</p>



<p class="wp-block-paragraph"><strong>Almond flour</strong>&nbsp;replaces breadcrumbs to keep these fully gluten-free without sacrificing that classic meatball texture. It also brings a little extra protein and healthy fat to the party instead of empty carbs.</p>



<p class="wp-block-paragraph"><strong>Ghee</strong>&nbsp;is where the richness comes from instead of butter. It&#8217;s naturally dairy-free (the milk solids are removed in the clarifying process), and it holds up beautifully to the warm spices without breaking down the way some oils do at higher heat.</p>



<p class="wp-block-paragraph"><strong>Coconut milk</strong>&nbsp;takes over for the heavy cream in traditional butter chicken. This was actually an easy swap — it brings the same silky texture, but coconut milk is loaded with medium-chain triglycerides, a type of fat your body can use quickly for energy instead of storing. It&#8217;s also naturally sweet, so you get some of that classic butter chicken richness without needing to add sugar.</p>



<p class="wp-block-paragraph"><strong>Turmeric and ginger</strong>&nbsp;are doing quiet work behind the scenes. Both are well known for their anti-inflammatory properties, which matters because chronic inflammation and elevated cortisol tend to feed each other. I always add a pinch of black pepper alongside the turmeric, too — the piperine in pepper can significantly increase your body&#8217;s absorption of curcumin, turmeric&#8217;s active compound, so it&#8217;s not just a flavor note, it&#8217;s what makes the turmeric actually count. Garam masala rounds out the spice blend with warmth that makes this taste indulgent, even though it&#8217;s built to support you.</p>



<p class="wp-block-paragraph"><strong>Tomato paste</strong>, bloomed in the pan with the spices before the crushed tomatoes go in, deepens the whole sauce. This little step concentrates the flavor so you don&#8217;t need any added sugar to balance the acidity.</p>



<p class="wp-block-paragraph"><strong>A few practical tips</strong></p>

<li>Don&#8217;t overmix your meatball mixture — it makes them dense instead of tender. Mix just until combined.</li>



<li>Bake the meatballs instead of pan-frying them first. It&#8217;s faster, less messy, and keeps this weeknight-friendly.</li>



<li>If your sauce feels too thick once everything&#8217;s combined, a splash more coconut milk loosens it right up.</li>

<li><strong>Adjust the heat:</strong>&nbsp;Add a pinch of cayenne or extra smoked paprika if you like more spice.</li>



<li><strong>Serve it your way:</strong>&nbsp;I love this over brown rice with quick-pickled cucumbers on the side, but cauliflower rice works too if you want to keep it lighter.</li>

<p class="wp-block-paragraph">Okay, I&#8217;ve officially jumped on the smash taco trend — and I have zero regrets.</p>



<p class="wp-block-paragraph">If you haven&#8217;t seen these all over your feed yet, smash tacos are exactly what they sound like: seasoned meat pressed directly onto a tortilla and cooked meat-side down in a hot skillet until everything gets golden, crispy, and completely irresistible. And honestly? They live up to the hype.</p>



<p class="wp-block-paragraph">But of course, I couldn&#8217;t just make a regular smash taco. I had to give it a gyro makeover — because Mediterranean flavors, crispy lamb, and a cool, creamy tzatziki situation on top? That combination was made for summer.</p>



<p class="wp-block-paragraph">The best part: this is a 20-minute, one-pan dinner that&#8217;s gluten-free, loaded with hormone-supporting nutrients, and genuinely something your whole family will get excited about.</p>

<h2 class="wp-block-heading">The Smash Technique: What You Need to Know</h2>



<p class="wp-block-paragraph">The magic of smash tacos is all in how you cook them — and a few details make the difference between crispy and soggy.</p>



<p class="wp-block-paragraph"><strong>Use cast iron if you have it.</strong>&nbsp;The heavy surface holds heat evenly and gives you that deep, restaurant-quality sear on the meat. A heavy stainless pan works as a backup, but cast iron is where the crispiness really happens.</p>



<p class="wp-block-paragraph"><strong>Go thin with the meat.</strong>&nbsp;When you press your seasoned meat onto the tortilla, spread it all the way to the edges and as thin as you can. The thinner it is, the more surface area gets contact with the pan — and the crispier the result.</p>



<p class="wp-block-paragraph"><strong>Don&#8217;t rush the flip.</strong>&nbsp;Let the meat cook undisturbed for a full 3–4 minutes before you flip. You&#8217;ll know it&#8217;s ready when the edges start to lift and you can see that golden crust forming underneath.</p>



<p class="wp-block-paragraph"><strong>Serve immediately.</strong>&nbsp;These are best eaten hot, right out of the pan, while the shell is still crispy. If you&#8217;re feeding a crowd, work in batches and let everyone assemble their own toppings.</p>

<li><strong>Ground beef</strong>&nbsp;— hearty, kid-friendly, and still rich in zinc and iron. A great option if your family is new to this flavor profile.</li>



<li><strong>Ground chicken or turkey</strong>&nbsp;— lighter, leaner, and still delicious with the Mediterranean spice blend. Add an extra drizzle of olive oil to the meat mixture so it stays moist and doesn&#8217;t dry out in the pan.</li>
</ul>

<p class="wp-block-paragraph"><strong>Siete almond flour or cassava tortillas</strong>&nbsp;are my top picks — they crisp up beautifully, hold their shape, and don&#8217;t crack when you press the meat on. If you can find them, grab those.</p>



<p class="wp-block-paragraph">Avoid rice-based tortillas for this recipe. They tend to crack under pressure and don&#8217;t get that satisfying crispy texture you&#8217;re going for.</p>
