Ingredients
1tbspolive oil or avocado oil
1small red onionsliced
4chicken sausagessliced (uncured, no sugar added, like Aidell's)
1medium sweet potatodiced
1applechopped (Honeycrisp or Pink Lady work great)
2cupschopped kalestems removed
1/2tspsea salt
1/4tspcinnamon
1/4tspblack pepper
1tbspapple cider vinegaroptional for brightness
Instructions
Heat oil in a large skillet over medium heat. Add onion and cook until softened, about 3–4 minutes.
Add chicken sausage and brown slightly, about 4 minutes.
Add diced sweet potato and cook for 7–8 minutes, stirring occasionally.
Add chopped apple, cinnamon, salt, and pepper. Cook another 5 minutes until tender.
Stir in kale and cook until just wilted, about 1–2 minutes.
