Crust
1/2cupraw almonds or walnuts
4pitted Medjool dates
1tbspchia seeds or ground flaxseed
Pinchof sea salt
Filling
3/4cupplain Greek yogurtor coconut yogurt for dairy-free
1/2cupraw cashewssoaked for 2 hours and drained
1scoop vanilla collagen peptides or protein powder
1 ½tbsphoney or maple syrup
1tspvanilla extract
1tbsplemon juice
Topping
1/4cupsliced strawberries
1/4cupfresh blueberries

Instructions
Make the crust: In a food processor, blend almonds, dates, chia seeds, and salt until crumbly and sticky.
Press evenly into the bottoms of a lined muffin tin or silicone molds.
Make the filling: In a blender or food processor, blend cashews, yogurt, protein powder, honey, vanilla, and lemon juice until ultra-smooth.
Spoon filling on top of each crust and smooth the tops.
