Ingredients
1½cupscoconut yogurt
1tbsphoney
½tspvanilla extract
1cupcrushed gluten-free cookiesshortbread or graham-style
¼cupbrewed decaf coffeecooled
1tspcinnamon
1tbspcocoa powderfor dusting
Instructions
In a bowl, stir together coconut yogurt, honey, vanilla, and cinnamon.
Spoon a small layer of crushed GF cookies into the bottom of each cup.
Drizzle a little of the cooled decaf coffee over the cookie layer.
Add a layer of the yogurt mixture on top.
Repeat layers until cups are full, ending with yogurt on top.
Dust the top of each cup with cocoa powder.
Chill for at least 1 hour before serving.
Notes
Using decaf coffee keeps this dessert cortisol-friendly, especially if you're enjoying it in the afternoon or evening. Regular coffee works too if you're eating it earlier in the day and know your body handles caffeine well.Nutrition estimate (per serving):
