Ingredients
For the Stuffed Peppers:
4large bell peppershalved and seeds removed
1tbspolive oil
1lblean ground turkey
1/2cupcooked black beans
1/2cupdiced tomatoesfresh or canned, or salsa
1/4cupchopped red onion
1tspchili powderor 2 tsp fajita seasoning in place of chili powder, cumin, and salt
1/2tspcumin
1/2tspsea salt
For the Cilantro-Lime Yogurt Sauce:
1/2cupplain Greek yogurt
1tbsplime juice
1/4cupchopped fresh cilantro
1/2tspgarlic powder
Pinchof sea salt
Instructions
Preheat oven to 375°F.
Sauté onion and ground turkey in olive oil over medium heat until browned. Add spices, tomatoes, and beans. Cook for 5 minutes.
Spoon mixture into halved bell peppers, then bake in a dish for 25–30 minutes until tender.
Mix yogurt sauce ingredients in a bowl.
Serve peppers with a drizzle of yogurt sauce and optional avocado slices.
