<p class="wp-block-paragraph">This Coconut-Ginger Parsnip Soup is one of those meals I come back to again and again during colder months, particularly when stress is high, energy feels fragile, or my body is craving comfort&nbsp;<em>without</em>&nbsp;heaviness. It’s simple, nourishing, and intentionally designed to support blood sugar, cortisol balance, and digestion—all themes I talk about often because they matter so much when you’re dealing with chronic stress or burnout.</p>

<h3 class="wp-block-heading">Why parsnips deserve more love</h3>



<p class="wp-block-paragraph">Parsnips are an underrated winter root vegetable, and I love using them in soups because they create a naturally creamy texture without relying on flour or dairy. From a functional nutrition perspective, they’re rich in fiber and slow-digesting carbohydrates, which helps support steady energy instead of the crash-and-burn cycle so many stressed bodies are stuck in.</p>



<p class="wp-block-paragraph">When paired with protein and healthy fat—as this soup is—parsnips become a powerful blood sugar–balancing base that keeps you full, grounded, and satisfied.</p>



<h3 class="wp-block-heading">The calming power of ginger + coconut</h3>
