Ingredients
2cupscoconut waterunsweetened
1/2cucumberthinly sliced (plus extra for garnish)
2limesjuiced
1/4tspsea salt or pink Himalayan salt
1tbsphoney or maple syrupoptional, to taste
1cupsparkling water
Fresh mint leaves for garnish
Ice
Instructions
Add cucumber slices to the bottom of a glass or mason jar and gently muddle with the back of a spoon to release the juice.
Pour in coconut water and fresh lime juice.
Add sea salt and honey or maple syrup if using. Stir well until dissolved.
Add ice to the glass.
Top with sparkling water and stir gently.
Garnish with extra cucumber slices and fresh mint. Serve immediately.
