Equipment

  • knife
  • muddler or back of spoon
  • citrus juicer
  • mason jar or tall glass

Ingredients

  • 2 cups coconut water unsweetened
  • 1/2 cucumber thinly sliced (plus extra for garnish)
  • 2 limes juiced
  • 1/4 tsp sea salt or pink Himalayan salt
  • 1 tbsp honey or maple syrup optional, to taste
  • 1 cup sparkling water
  • Fresh mint leaves for garnish
  • Ice

Instructions

  • Add cucumber slices to the bottom of a glass or mason jar and gently muddle with the back of a spoon to release the juice.
  • Pour in coconut water and fresh lime juice.
  • Add sea salt and honey or maple syrup if using. Stir well until dissolved.
