Simplify Busy Evenings with these One-Pan Dinners

Sometimes it’s all we can do to just get dinner cooked, much less clean up after. I know this is especially true for me on those busy nights when my husband is flying and I have kids going in different directions. 

On those kinds of nights, I turn to our favorite one-pan dinners. One pan means they can’t be too complicated right? 

Tonight was one of those nights for us. So, I pulled out my trusty sheet pan chicken fajita lettuce wraps. They took 5 minutes to pull together and pop into the oven. Clean up was 10 seconds of removing the foil from the pan and tossing it in the trash. Boom! Mom wins. 

I’ve included the printable recipe below along with 2 of our other favorite one-pan recipes, including my notes for pleasing picky eaters without sacrificing your own health goals. 

Sheet Pan Chicken Fajita Lettuce Wraps

If your littles don’t appreciate lettuce wraps, you can obviously use regular tortilla shells or tortilla chips for them and keep the lettuce-y goodness for yourself. We prefer the Siete brand shells (https://amzn.to/3SCYAgv) and chips (https://amzn.to/47Y9txJ) because they are clean and gluten-free. You can also make a fajita bowl with black beans and rice and a little cheese with a dab of sour cream. This is my daughter’s preferred method. 

Cheesy Taco Vegetable Skillet

This is one where you can hide a bunch of different nutritious veggies, and they will never know because it’s covered under delicious cheese! However, if they catch you making it, they may not exactly appreciate the zucchini and spinach. So, you can honestly sub any crunchy veggie for the zucchini – think shredded carrots – that your kiddos like for the zucchini. For the spinach, you can try any hardy, leafy green, though I think spinach has the mildest flavor. 

Sheet Pan Mediterranean Chicken

I just love Mediterranean flavors! I hope you do, too! Plus, this sheet pan Mediterranean chicken is just so colorful! Again, if your people aren’t into squash and zucchini, you can sub any veggie of your choosing (note: you may need to adjust cooking time). The dressing is so good though, you may not have to!
