Ingredients

  • 1.5-1 lbs boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tbsp avocado oil
  • 1 cup chickpea orzo
  • Water + pinch of salt for cooking orzo
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach
  • ½ cup kalamata olives sliced
  • Zest + juice of 1 lemon
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ¾ tsp sea salt or to taste
  • ½ tsp black pepper
  • ¼ cup crumbled feta optional, or dairy-free alternative
  • 2 tbsp fresh parsley chopped
  • 1-2 tbsp olive oil for finishing

Instructions

Cook the Chickpea Orzo (Key Step)

  • Bring a pot of salted water to a boil.
  • Add chickpea orzo and cook for 1–2 minutes less than package directions (usually about 6–7 minutes total).
  • Stir occasionally to prevent sticking. Do not overcook—it will continue softening later
  • Drain immediately and rinse lightly with warm water to stop cooking.
  • Set aside.

Sear the Chicken

  • Heat avocado oil in a large skillet over medium heat.
  • Add chicken, season lightly with salt and pepper, and cook for 5–7 minutes until lightly browned.
  • Remove and set aside.

Build the Flavor Base

  • In the same skillet, add diced onion and cook for 2–3 minutes until softened.
  • Add garlic and cook for 30 seconds until fragrant.

Add Seasoning & Brightness

  • Stir in: Lemon zest + juice and seasoning (Oregano, basil, salt, and pepper)

  • Gently toss to combine over low heat for 2–3 minutes.
  • Keep heat low and avoid over-stirring to prevent the orzo from breaking down.

Add Spinach & Finish

  • Fold in spinach and let it wilt.
  • Turn off heat and drizzle with olive oil for added moisture and flavor.
  • Top with: Crumbled feta, Fresh parsley
  • Serve immediately for best texture.
