One-Pan Sweet Potato and Apple Skillet Hash with Turkey Sausage

Ingredients
- 1 tbsp olive oil
- 1 lb ground turkey sausage or turkey breakfast sausage links, chopped
- 1 large sweet potato peeled and diced
- 1 apple such as Honeycrisp or Granny Smith, diced
- 1/2 red onion diced
- 1/2 tsp cinnamon
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley chopped, for garnish (optional)
Instructions
- Cook the Turkey Sausage: Heat the olive oil in a large skillet over medium heat. Add the ground turkey sausage (or chopped turkey sausage links) and cook until browned and cooked through, breaking it up with a wooden spoon as it cooks. Transfer to a plate and set aside.
- Sauté the Sweet Potato: In the same skillet, add the diced sweet potato, cooking for about 8-10 minutes until tender, stirring occasionally.
