Super Bowl Sweet Potato Nachos
Equipment
- baking sheet
- parchment paper

Ingredients
- 2 medium sweet potatoes thinly sliced
- 1 tbsp olive oil
- 1 lb ground beef
- 1 tbsp taco seasoning sugar-free
- ½ cup red onion thinly sliced
- 2 tbsp apple cider vinegar
- 1 avocado
- 2 tbsp lime juice
- 2 tbsp plain Greek yogurt or coconut yogurt
- Salt to taste
- Optional toppings: chopped cilantro jalapeño slices, pumpkin seeds
Instructions
- Preheat oven to 425°F. Toss sweet potato slices with olive oil and a pinch of salt. Roast 25 mins, flipping halfway.
- In a skillet, cook ground beef with taco seasoning until browned.
- Quick pickle onions by tossing with vinegar and a pinch of salt. Let sit 15 mins.
- Blend avocado, lime juice, yogurt, and salt to make crema.
